Interview with Anael Payrou from Cellier des Demoiselles France.

1. Can you tell us about the history of the cooperative and its founding?
Anael: Founded in 1914, the cooperative honors the women who managed the vineyards during the war, reflected in its name, Cellier des Demoiselles. This legacy continues to inspire a focus on quality and tradition.
 
2. What is the most rewarding part of your work?
Anael: The greatest reward is connecting people to the unique terroir of Corbières and seeing the joy their wines bring.
 
3. What sustainable or organic practices do you apply in your vineyard?
Anael: We prioritize organic treatments and biodiversity, aiming to reduce chemicals and nurture the soil for sustainable, high-quality wine production. The goal is to keep the vineyard as natural as possible to enhance flavor.
 
4. Can you describe the tasting profile of the organic rosé we are tasting?
Anael: This organic rosé has a light pink hue with salmon highlights. Made from 75% Grenache Noir and 25% Syrah, it offers fruity, spicy, and tangy aromas, with a fresh, smooth taste and a delicate, spicy finish.
 
5. What are the main challenges in winemaking today, and how do you overcome them?
Anael: Climate change is a major challenge, affecting harvest timing and soil conditions. We adapt by using resilient vine techniques and adjusting vineyard practices accordingly.
 
6. How do you balance tradition with modern techniques?
Anael: We combine traditional methods with modern techniques, such as mechanical night harvesting, destemming, and nitrogen protection to preserve freshness. We also offer new products and a modern brand to appeal to younger generations while respecting family traditions.
 
7. How important are direct interactions with consumers, such as tastings?
Anael: Consumer interaction is key to our mission. Tastings allow us to share the story of our wines and build a deeper connection with our customers.
 
8. What are the future plans for your cooperative? Any upcoming developments?
Anael: We plan to expand into international markets, including the U.S., which is why we’re excited to share Corbières wines with Angelenos.
 
9. Can you suggest a meal that pairs well with this rosé?
Anael: This rosé pairs beautifully with Mediterranean dishes like lasagna, paella, couscous, and pizza, where its fresh flavors and subtle spice enhance the meal.
 
10. What advice would you give to wine enthusiasts?
Anael: Enjoy the wine-tasting experience without overthinking it. Each bottle offers a lot of pleasure, so savor it and keep it simple.
